Super Lean Organic Beef & Veggie Chili

Ingredients (Find it at Rouse’s)

  • 2 pks Laura’s Lean Organic Ground Beef
  • .25 c water or stock
  • 1 medium onion, diced
  • 1 yellow bell pepper, diced
  • 3 celery stalks, diced
  • 3 carrots, peeled and diced
  • 1 ea green & yellow zucchini
  • 3 large cloves garlic, minced
  • 2 T olive oil, reserve 1 T
  • 2 T cumin
  • 2 T chili powder
  • 14.5 oz Muir Glen Organic Fire Roasted Diced Tomatoes
  • 2 cans Amy Organic Chili beans
  • Kosher salt or Sea Salt, to taste
  • Fresh ground black pepper, to taste
  • Red pepper flakes, to taste (if you like it spicy)
  • 48 fl oz Kitchen Basics Unsalted Beef Stock

Preparation

1.  Sautee, until slightly caramelized, onion, bell pepper, celery, carrots, garlic, and zucchini in 1 T olive oil. Sprinkle lightly with salt and ground pepper. Add 2 packs lean ground beef, plus .25 c water, 1 T olive oil and  scatter until beef separates in small bits and cooks half through. Add cumin and chili powder.
2. Add beans, tomatoes,and stock. Salt and pepper to taste. Cover and let simmer for 40 – 60 minutes. The longer you let it simmer, more fluid will dissipate leaving a chunkier chili.

Tips: Beans are a carb source in this meal, but you may need a little more. Try adding a .25 c brown rice.
